The Sundial
Tucked away in the charming village of Herstmonceux, The Sundial is more than just a restaurant-it’s a well-kept culinary secret waiting to be discovered. Set on Gardner Street in Hailsham, this countryside gem oozes rustic elegance with an old-world French touch that draws locals and travelers alike for everything from intimate dinners to leisurely solo lunches.
What makes The Sundial stand out isn't just its picturesque setting, but the sheer attention to detail in every aspect of the dining experience. From the moment you walk into this inviting space, with its warm fireplace crackling in the background and a gentle aroma of freshly ground coffee mingling with hints of roasted meats, you can sense this isn’t your average British countryside eatery.
Step outside on a sunny day, and you’ll find their outdoor seating-a peaceful oasis with the gentle murmur of nature. Inside, the restaurant remains accessible to all, boasting a wheelchair-friendly layout, including entrance, seating, toilets, and car park-thoughtfully inclusive without compromising charm.
Now, let's talk food. The Sundial takes classic French cuisine and elevates it into something utterly memorable. The menu feels both nostalgic and refined, with dishes like duck breast cooked to a tender blush, and guinea fowl that’s rich yet delicate, paired effortlessly with a robust glass of wine from their extensive, expertly curated wine list. Speaking of drinks, their champagne cocktail is the kind of celebratory start that hints at what’s to come.
Among the popular starters, the beef carpaccio perfumed with white truffle and slivers of Parmesan Regiano is a showstopper-decadent but never overwhelming. For those with a taste for the extraordinary, the foie gras terrine hits all the right notes: creamy, rich, and perfectly balanced with seasonal accompaniments.
Main courses rotate with the seasons but always maintain their signature finesse. Whether it’s lamb cutlets with a herb crust or a meltingly tender filet mignon, every bite reflects a kitchen that knows its craft and isn’t afraid to show it. Even the humble crepes come alive here, presented with flair and served either savory or sweet depending on your mood.
Desserts deserve their own spotlight. Chocolate parfait, mousse au chocolat, and panna cotta aren’t just afterthoughts-they’re moments of indulgence, each with textures and flavors that dance between comfort and surprise. For something lighter, the frozen gala melon or lychee sorbet offers a refreshing close to an otherwise luxurious meal.
Coffee lovers, rejoice. The Sundial doesn’t just serve coffee-it serves great coffee. Rich, bold, and expertly brewed, it’s the kind of after-meal sip that keeps conversations lingering. Pair it with custard, a classic French pastry, or even a scoop of homemade sorbet, and you’ll find yourself forgetting the world outside altogether.
It’s not all just fine dining either. There's a certain warmth in the service-a blend of professionalism and familiarity that makes guests feel both well cared for and right at home. Whether you’re a wine connoisseur looking to explore their great wine list, or someone simply out for a quiet bite and a quality cup of joe, The Sundial knows how to deliver.
For vegetarians, there are elegant options scattered throughout the menu-balanced, colorful plates that go far beyond the usual token offerings. And if you enjoy your meal with a good beer, spirit, or a crafted cocktail, the bar is well-stocked and ready to impress.
There’s something timeless about The Sundial. It blends countryside tranquility with upscale dining without ever feeling stiff or pretentious. Whether you’re in it for the culinary adventure, the romantic setting, or just a quiet solo lunch with excellent food and even better wine, this spot makes each moment feel a little more special.

Wonderful food in a traditional, French inspired restaurant. A superb menu of 3 excellent courses for £55, with lots of choice including a divine fillet steak! However it is the little treats, all included in the price, that make this restaurant stand out, and make the meal a special experience. Amuse bouche with drinks, and before the meal (a delicious crayfish mousse). Then a calvados granita before the main course and a chocolate coated Berry ice cream lollipop as a predessert. We had a super evening. This restaurant is a lovely place for a special meal, or a business meeting or a gathering of family and friends. We will be back! Thank you.
Magical. This restaurant is an absolute find. The food was full of flavour and simply perfect. The service attentive but discrete and well timed. The owners and staff are professional, polite and genuinely interested in giving you the very best experience. Lovely relaxed quiet dining area, perfect for any special occasion. I would recommend The Sundial Restaurant to anyone looking for something special and look forward to more visits in the future.

This is unshamelessly the best restaurant I have dined in near Hastings. It is the epitome of excellence. From getting out of your car to getting back in again is a beautiful journey of decadence. I had the most exquisite lunch on the beautiful patio served by a wonderful young lady. This is truely a family run business with a wonderful passion and commitment to excellence. You will most definitely go away with a smile dining here. Just perfect.
What a wonderful experience. My mother's 80th birthday sorry 21st again. A superb restaurant. A big car park plenty of space. A lovely welcome and a bottle of champagne sitting on a sofa opening gifts. Some delicate pastries, sandwiches and olives. My sister forgot to tell them she's gluten free - no problem at all. The chef came out to discuss food options with her and talk about Montpellier where he had lived and she has been living the last 12 years. Such a selection of amazing food - we were overwhelmed. I was glad I had skipped breakfast to allow room for lunch. But the portions were generous without being too much. Les amuse bouches were delightful - a courgette, avocado, garlic mousse (hope I remembered that right) was delicious. Scallop starter for me and mum, foie gras for my brother. They even had a gluten free bread roll with her starter for my sister - she was stunned. That does not happen ever ! Main courses of fish, steak x2 and rack of lamb all delicious with vegetables and superb sauces. Desserts of sorbets were fabulious and the trio of chocolates kept the chocahoclics more than contented and raving. Then coffee and some delicious pastries. We definitely stayed longer than any other restaurant meal ever. But we were still welcome and pampered. Thank you so much. Wonderful service and food. Very very highly recommend. Wonderful on all counts. Will be back soon. Thank you, mum had the best birthday and we all had the best meal/experience possibly ever.
